Roasted Asparagus with Balsamic Browned Butter

40 Asparagus spears -- trimmed (about 2 pounds) cooking spray (or olive oil) 1/4 tsp kosher salt 1/8 tsp black pepper 2 Tbsp butter 2 tsp soy sauce 1 tsp balsamic vinegar
1. Preheat oven to 400 degrees 2. Arrange asparagus in a single layer on baking sheet, coat with cooking spray or spray on olive oil. Sprinkle with salt and pepper. Bake at 400 degrees for 12 minutes or until tender. 3. Melt the butter in a small skillet over med. heat; cook for 3 minutes or until lightly browned, shaking pan occasionally. Remove from the heat; stir in soy sauce and vinegar. Drizzle over the asparagus, tossing well to coat. Serve immediately.
Finish the asparagus just before serving dinner. Cooking the butter until it browns slightly gives the dish a nutty flavor; watch carefully, though, since it can burn easily. Serves 8 @ 3.9g carbs each
