Hot Zucchini

Serves 4  

 6 medium zucchini -- sliced into rounds
 1 cup Monterey jack cheese -- grated
 1/2 cup pork skins -- grated
 14 1/2 ounces canned tomatoes -- Rotel brand, mild or hot

Boil zucchini for 8 minutes until crisp-tender. 
Place half of zucchini in greased casserole and sprinkle with cheese and crushed pork rinds.
Top with remaining zucchini and cover with tomatoes.
Bake 30 minutes at 350 degrees.
