Didi's Rhubarb Nut Quick Bread

1/2 Cup Heavy Cream 1/2 Cup Water 1 Tablespoon Lemon Juice 2 Teaspoons Lemon Zest 1 Teaspoon Vanilla Extract 1 Cup brown sugar malitol 1/4 Cup Splenda 2 Teaspoons Brown Sugar Twin 2/3 Cup Coconut Oil (Or Shortening Of Your Choice) 1 Egg 1 3/4 Cups Almond Flour 1/4 Cup wheat gluten 1/2 Cup Vanilla Protein Powder 1 Teaspoon Salt 1 Teaspoon Baking Soda 1 1/2 Cups Diced Rhubarb 1/2 Cup Pecans 3 Tablespoons Strawberry Da Vinci Syrup
Crumb Topping "Optional" 1/4 Cup Brown Sugar Maltitol 2 Teaspoons Brown Sugar Twin 1/2 Teaspoon Cinnamon 1 Tablespoon Melted Butter
Preheat oven to 325 - Lightly grease two 9X5 inch loaf pans.
Meanwhile, place the diced rhubarb in a small saucepan and drizzle with the davinci, let simmer till just tender. Let cool. In a small bowl, combine cream, lemon juice, zest and vanilla extracts and let stand 10 minutes.
In a separate bowl, sift together the flour, baking soda, baking powder, and salt till thoroughly combined. In a large bowl, mix together the sugars, oil and egg.
Incorporate the cream mixture, mixing well, (wire whisk does wonders), then add the flour mixture slowly. Once incorporated, fold in the rhubarb along with the nuts.
Pour batter into the greased loaf pans. In a small bowl, combine the brown sugar, cinnamon and tbls of butter. Sprinkle the sugar mixture over the unbaked loaves.
Bake in a preheated oven for 35-40 minutes, until a knife inserted into the center of a loaf comes out clean.
Yield: 24 slices, 2g per slice
*Note: I am going to reduce the amt of oil for my next batch, I think with the amt. of moisture from the fruit and the nut oils from the nuts, it can easily get away with I would say 1/3c shortening, but please try it as is first* You can sub any fruit I'm sure for this basic recipe, but I used rhubarb cause their so lc and their cheap and in season...
