Confetti Coleslaw Russell

4 cups green cabbage leaf -- shredded (or 1 head)
2 cups red cabbage -- shredded (or 1/2 head)
1 cup grated carrots
3/4 cup diced red bell pepper -- (1 pepper)
3/4 cup diced yellow bell pepper -- (1 pepper)
3/4 cup sliced green onions -- (1 bunch)
1 1/2 cups oil
1/2 cup cider vinegar
3 tablespoons water
1 clove garlic -- crushed and minced
1 tablespoon sugar substitute
2 tablespoons thyme -- dry
1/2 jalapeno pepper -- minced
salt and pepper -- to taste

Slaw: Mix the vegetables together until it looks like confetti. Set aside.

Mix dressing ingredients together. Allow it to sit awhile to let the flavors blend. Taste and correct seasonings, if necessary.

Mix the dressing into the slaw and serve.
