Coconut Pecan Meringues

from "The Smart Guide to Low-carb Cooking by Mia Simms"

4 egg whites
1/8 tea. Stevia
1/2 tea. vanilla extract
1/3 cup Designer Protein (French Vanilla)
1/2 cup coconut, shredded and toasted (make sure it is unsweetened)
1/3 cup pecans, finely ground and toasted
Butter

In a medium bowl, beat egg whites, stevia extract,
and vanilla extract until stiff peaks start to form.  
In a small separate bowl combine Designer Protein,
coconut and pecans.  Gently fold nut mixture in with egg whites.  
Drop batter onto generously buttered cookie sheet
by the heaping tablespoons.  Bake at 250 for about
30 minutes. 
Turn oven off, keep door shut and allow cookies to
remain in the oven for 30 more minutes.

Makes about 16 cookies.
