Coconut Curry Sauce

3 oz. Unsweetened coconut
1/4 cup water
1 egg
Lemon peel
lemon juice
1 t mustard
2 tb curry powder
1/2 cup oil
salt & pepper

Cook water, add coconut and boil for 1 minute with a lid. Let cool for 15 minutes. Press the water from the coconut and throw away coconut. Make a mayonnaise from the remaining ingredients and add the cooled coconut milk to the mayo.

Great sauce for poultry and fondue.
