Coconut Cream Dream

from "Low-Carb Cooking by Mia Simms" 

1/3 cup purified water
1 packet gelatin
1 13 oz can coconut milk, with carbo portion (clear liquid) removed
1/3 cup whey protein concentrate vanilla flavor
1/4 cup cream
1/4 cup grated coconut
1/4 tsp. stevia

Add gelatin to water in a small saucepan. 
Turn heat on low and gently  stir  gelatin in water
until completely dissolved.  
Pour coconut milk, whey protein concentrate, cream,
stevia and half of the grated coconut into a blender
or food processor.  Blend for 30 seconds.  
Add gelatin water and blend for 30 more seconds. 
Pour into four custard cups,sprinkle with remaining
grated  coconut and chill until dessert sets.  
Serve with a dollop of whipped topping.

Gail Butler adds:  The changes I have made are that
I use 3 or 4 packages of Splenda instead of the Stevia.
Also tonight I had run out of the unflavored gelatin
so I tried using a box of SF orange jello and mixed it with 1/3 cup of boiling
water and then added it to the blender as the recipe suggests. 
I also added a capful of orange extract just to be sure
that it was really orange-y.  Oh my goodness!  It was
terrific.  So good in fact that I ended up eating two
cups before it had a chance to jell.  It tasted like creamscicles.
