Church Potluck Fauxtato Casserole

1 pound cauliflower -- steamed and chopped
2 tablespoons minced onion
2 tablespoons butter -- melted
1 cup sour cream
1 cup cream of chicken soup -- undiluted
1 cup cheddar cheese -- shredded - to mix in
1 cup cheddar cheese -- shredded - for top

Stir together all of the above, except the extra cheese.

In a greased 9x13 or slightly smaller dish, pour mixture.

Bake at 350 degrees, covered, for about 20 minutes. Uncover, add additional cheese and bake about 15 minutes longer.
