Baked Tofu with Green Beans

Serving Size: 4
1/2 pound green beans, cut 1.5 inch pieces
1 cup tofu, baked and cut into cubes
1/2 cup water
1 tablespoon canola oil
1 tablespoon soy sauce
1 dash black pepper
1/4 cup cilantro, fresh, for garnish
In a large skillet, heat water to boiling, then add beans and tofu.
Stir cook for 10 minutes, add soy, pepper and oil and cook another 2
minutes: beans should be done but still crunchy.
Garnish with cilantro and serve with rice or potatoes.
Baked tofu is sold, seasoned or plain, in deli sections.
TO BAKE tofu at home, place 1/2 inch thick slices of firm tofu on a
sheet and bake at 350F for 20 minutes or until golden yellow in color.
