1 pound asparagus, cooked, cut in 1" pieces
10 large eggs, beaten
2 yellow onions, chopped
2 cloves garlic, minced
1 cup pork rinds, crushed
1 1/2 cups parmesan cheese, grated
1 1/4 cups olive oil
1 cup parsley, fresh, chopped
1 1/2 teaspoons Italian seasoning
2 teaspoons salt and pepper
Saute onions and garlic in olive oil under tender. Add aspargus, pork rinds, cheese, parsley, seasonings. Cook until warmed through.
Add beaten eggs to mixture and remove from heat. Pour the mixture into oblong baking dish and bake at 350 degrees for 45 minutes. Allow to rest before cutting into squares and serving. May be served hot or cold and freezes very well for later use.
